Frying plantains (a variety of banana) over an open fire is the team's favorite snack anytime of day. This is our guide Warren's specialty. Upon arriving at camp, he will start a fire, slice the plantains, and then sauté them in oil over the flames. We often eat about two pounds of plantains per person per day. Plantains are a major staple food for the people in the Amazon. They are found boiled or fried in most meals. The banana and plantain is originally from the jungles of Asia. Since it's introduction to South America in the 1600's, many tribal peoples in the Amazon have adopted the plantain over the native yucca root as the staple food. Go bananas, go, go, bananas!!
